A Culinary “Cruise” around the Med – National Vegetarian Week at Sibila’s

Each year, one week in May, National Vegetarian Week, is devoted to the joys of vegetarian food. This year, with climate change in the headlines, Sir Paul McCartney recently urged us to embrace a vegetarian diet as a way to combat global warming. After all, worldwide emissions from farmed animals exceed all those from transport.
National Vegetarian Week, from the 19th to 25th of May, is a good time to address topical food subjects such as healthy eating, or the environmental impact of food, not to mention broadening your diet and coming up with fresh ideas.
Sibila’s Restaurant, rated one of the top vegetarian restaurants in the UK by the BBC Good Food Magazine, the Observer Food Supplement and “Men’s Health”, among others, celebrates National Vegetarian Week with a special gourmet menu to highlight the variety and uniqueness of vegetarian cuisine with its special textures and flavours, and show how easy it is to create fantastic, meat-free food.
Sibila’s roots are in the Mediterranean, so what better way to showcase her skills than to offer a culinary tour of some of the great dishes of the region, an imaginary week’s cruise visiting Barcelona (Spain), Naples (Italy), Dubrovnik (Croatia), Athens (Greece), Istanbul (Turkey),  Haifa (Israel) and Tunis (Tunisia).
For starters, there will be a selection of twelve small dishes, known in the Eastern Mediterranean as “Mezze” and in the West as “Tapas” followed by a choice of mains from each ‘port of call’:
•    Chickpea and pear stew with almond sauce and saffron rice (from Spain),
•    Lettuce and asparagus pie served with pickled courgettes (from Italy),
•    Stuffed pointed peppers served with braised potatoes and red onion salad (from Croatia)
•    Bamies me tomatoes: okra, leeks and tomato stew served with skorthalia and broad beans (from Greece)
•    Iman Bayaldi ( aubergine casserole) served with white beans (from Turkey)
•    Sibila's vegetarian version of the traditional Sabbath stew, Dafina, with bright green salad (from Israel)
•    Vegetable tangine with pumpkin couscous served with prune and onion confit (from Tunisia)

And at a price of just £13.90 for a cruise “ticket”, Bon Voyage!
